For Phoenix, this would be late winter (February) or early spring (March). Use a well-draining seed starting mix and sow seeds ¼ inch deep. Maintain a soil temperature of 75-85°F (24-29°C) for optimal germination. California Wonder peppers can also be grown in containers, but ensure the container is large enough (at least 5 gallons) and provides good drainage.

Transplanting

Transplant seedlings into the garden after the last frost when the soil temperature is consistently above 70°F (21°C). In Phoenix, this is typically in late March or April. Choose a spot with full sun (at least 6-8 hours per day). Peppers prefer well-drained, fertile soil with a slightly acidic pH (6.0-6.8). Amend the soil with compost or a balanced fertilizer. Space plants 12-18 inches apart.

Care

Water deeply and regularly, especially during hot, dry periods. Aim for about 1-2 inches of water per week. Let the soil dry slightly between waterings. Fertilize regularly with a balanced fertilizer every 4-6 weeks during the growing season. Provide some shade during the hottest part of the day. Stake plants to support the weight of the peppers.

Harvest

California Wonder peppers are typically harvested when they are full-sized and have reached their mature color (green to red). Gently twist or cut the peppers from the plant.
